Sangiovese is the most widely cultivated grape variety in Italy – over 100,000 hectares – and the backbone of some of the world's most famous wines: Chianti Classico, Brunello di Montalcino, Vino Nobile di Montepulciano, Morellino di Scansano. But the IGT Toscana version tells a different story: that of producers who have chosen creative freedom outside strict regulations, making Sangiovese according to their own vision without the constraints of historical appellations.
The origins of Sangiovese are shrouded in mystery. The name first appeared in 1590 in a text by Friar Giovanvettorio Soderini, but theories about its origin are numerous: some trace it back to the Etruscans, others to the Romans, and some claim a Calabrian origin. Recent genetic analyses suggest it is a natural cross between Ciliegiolo and Calabrese Montenuovo, two ancient grape varieties from Central and Southern Italy.
Curiosity: Sangiovese is one of the grape varieties with the highest number of biotypes and clones in the world – over 100 have been counted – which explains why a Chianti Classico and a Brunello di Montalcino, despite both being 100% Sangiovese, can seem like completely different wines. The territory, the clone, and the winemaker's hand make all the difference.
In its organic IGT Toscana version, Sangiovese expresses itself with great freedom: fresh cherry and sour cherry, violet, aromatic herbs of the Tuscan scrub, with elegant tannins and an acidic freshness that makes it versatile at the table. Pairings: Florentine steak, pappardelle with wild boar, Tuscan Pecorino, Cinta Senese cured meats.
