The vineyards are rooted in predominantly calcareous-clayey soils, a composition capable of retaining deep moisture and gradually releasing it to the vines during the hottest summer months, ensuring constant vegetative balance. Transformations occur under strict temperature control to safeguard varietal freshness, minimizing invasive physical treatments and the use of sulfur dioxide. Verdeca interprets the white profile of the territory, standing out for its marked freshness, floral notes, and a clear mineral trail. The Rosé of Negroamaro is part of the historical tradition of Salento rosés, highlighting a taut, fruity, and distinctly gastronomic drinkability. On the red front, Primitivo expresses warmth, envelopment, and notes of dark ripe fruit without ever being cloying, while Negroamaro shows the more structured and spicy side of the winery, with a dense tannic texture and a dry, clean finish.
