Sangiovese IGT Toscana ORGANIC - Aione

Podere Casina's Sangiovese IGT Toscana BIO 2021 Aione is the flagship red of an organic, family-run winery founded in 1987 by Rahel Kimmich and Marcello Pirisi in the Maremma hills, between Grosseto and Scansano. Twelve hectares of vineyards on sandy soils rich in galestro give the Sangiovese a freshness and minerality not found in the more famous areas of Toscana. Manual harvest, cooling of the grapes to 6°C, spontaneous fermentation in steel for 12 days, maturation in third-passage tonneau for 12 months. No new wood to cover the fruit — just Sangiovese telling the story of Maremma.

In the glass, an intense, vibrant, and brilliant red. On the nose, violet and ripe fruit, then with aeration, powder, carob, and vanilla. On the palate, elegant and well-integrated tannins, lively freshness, a rich and enveloping body. The finish is long and persistent, with a complexity that grows in the glass and invites another sip.

Recommended for: Those who love Sangiovese but want to explore beyond the well-trodden paths of Chianti and Brunello, seeking character without paying for the name of the appellation. Aione is the ideal choice with wild boar pappardelle, Florentine steak, roasted red meats, and aged Tuscan cheeses. An unconventional pairing: with a winter ribollita, where the freshness of the Sangiovese unexpectedly cuts through the richness of the dish. Serve at 16-18°C, decanting optional.
