The Pinot Grigio IGT Terre di Chieti BIO comes from Palazzo Centofanti, an organic winery in Giuliano Teatino, nestled in the Chieti hills of Abruzzo. While Pinot Grigio is an international grape variety, here it tells the story of a specific territory – the Teatine hills between the Apennines and the Adriatic – with a climate that imbues the wine with a vibrant freshness and acidity, distinctly setting it apart from the flat, neutral Pinot Grigio often found in supermarkets. The white vinification process, with a maximum yield of 50% must – a precise production choice – prevents the wine from acquiring the typical rust color from the skins, thereby preserving its aromatic cleanliness and varietal freshness.

The vinification is careful and respectful: soft pressing, fermentation in steel tanks at low temperatures, aging on fine lees for about 4 months before bottling. The fine lees impart structure and creaminess without heaviness, giving the wine a complexity that goes beyond standard Pinot Grigio.

It presents a pale straw yellow color. The nose offers intense aromas of tropical fruit – mango, papaya – with delicate floral nuances.
