Pinot Grigio DOC BIO Friuli comes from Simon di Brazzan, an organic farm in Cormons, in the heart of Friuli's Collio region. Here, Pinot Grigio is not the neutral, commercial white found everywhere — it's a wine with structure, minerality, and a complexity born from hybrid winemaking and the borderland territory between Italy and Slovenia.

The winemaking is precise and intricate: manual selection, gentle destemming, soft pressing, and fermentation in steel at controlled temperatures. Two-thirds remain in steel on the lees until the end of February. One-third, however, undergoes fermentative maceration for 18 days, then is separated with a traditional press and aged in wooden barrels on the lees until the end of February. The final blend is one-third wood and two-thirds steel. The result is a Pinot Grigio that combines freshness and structure — far from the industrial version of the varietal.

On the nose, pear, golden apple, white flowers, and a mineral note from the Collio. On the palate, fresh and savory, with a surprising structure and a persistent finish with hints of ripe fruit.
