Sangiovese IGT Toscana BIO - Aione

The Sangiovese IGT Toscana BIO 2021 Aione from Podere Casina is the flagship red wine of a family-run organic winery founded in 1987 by Rahel Kimmich and Marcello Pirisi in the Maremma hills, between Grosseto and Scansano. Twelve hectares of vineyards on sandy soils rich in galestro give the Sangiovese a freshness and minerality not found in more famous areas of Tuscany. Manual harvest, cooling of grapes to 6°C, spontaneous fermentation in steel for 12 days, maturation in third-pass tonneau for 12 months. No new wood to cover the fruit – just Sangiovese telling the story of Maremma.

In the glass, it is an intense, vibrant, and brilliant red. The nose reveals violet and ripe fruit, then with aeration, powder, carob, and vanilla. In the mouth, elegant and well-integrated tannins, lively freshness, and a rich, enveloping body. The finish is long and persistent, with a complexity that grows in the glass and invites another sip.
