2023

The Rosato IGP Terre Siciliane BIO is produced by Bosco Falconeria, a family-run organic farm active since 1933, a few kilometers from Palermo with a view of the Gulf of Castellammare. Organic since 1989, the Simeti family produces this rosé from Nero d'Avola grapes hand-picked between late August and early September—the same grape variety as their red wine, but vinified in a completely different way to achieve freshness, aroma, and lightness.

The winemaking process is white vinification: spontaneous fermentation in steel tanks and six months of aging in the same material. No wood, no prolonged maceration. The result is a rosé that retains the intact vibrancy of Sicilian fruit, with a pomegranate-pink color that captivates at first glance.

On the nose, black cherry and strawberry, intense and refined aromas. On the palate, black cherry and strawberry with hints of pomegranate and an aromatic touch of wild mint. Fresh, full-bodied, versatile.

Who it's recommended for

For those looking for an organic Sicilian rosé with personality—not the usual pale and neutral rosé, but a wine with real fruit, intense aroma, and a production history of almost 40 years of organic farming. It's the right bottle for those who want something different from Provençal rosés, with a precise and recognizable territory in the glass.

When to drink it

It's already enjoyable today and designed for immediate pleasure. Ideal within 2 years of the vintage to best enjoy its aromatic freshness. Perfect for summer, but structured enough to accompany meals even in autumn.

Taste characteristics

A full-bodied and aromatic rosé, where red fruit—black cherry, strawberry, pomegranate—dominates the palate with a freshness that doesn't tire. The touch of wild mint on the finish is Bosco Falconeria's Sicilian signature. Versatile from appetizers to dessert.

Why we chose this wine

Because Bosco Falconeria is one of Sicily's longest-standing organic realities, and their rosé is an example of how Nero d'Avola can express itself in a completely different way than red wine. We offer it because it is consistent with our selection: certified organic since 1989, precise Sicilian territory, winemaking that respects the fruit.

FAQ

What dishes does the Rosato IGP Terre Siciliane BIO pair with?
Appetizers, pasta and risotto with fish, shellfish, white meats, fresh cheeses. Also excellent with Sicilian caponata and summer vegetable dishes.

Why is it made with Nero d'Avola and not with a white grape variety?
Nero d'Avola vinified as a white wine—without maceration on the skins—produces a rosé of great fruit and freshness. It is a traditional Sicilian technique that enhances the aromatic richness of the grape without extracting its color and tannins.

Is it a certified organic wine?
Yes. Bosco Falconeria has been organic since 1989, with official certification. No synthetic pesticides in the vineyard, spontaneous fermentation in the cellar.

Should it be served very cold?
12–14°C is the ideal temperature—higher than many rosés to allow the black cherry and wild mint aromas to fully express themselves. Take it out of the fridge 10–15 minutes before serving.
