Il Sempre is the rosé from Podere Casina, an organic family-run winery founded in 1987 by Rahel Kimmich and Marcello Pirisi in the Maremma hills. But it's not just any rosé: it's made from Syrah, an unusual grape variety for Tuscany, vinified with a double technique that few producers use — half of the must is bled off (saignée) and half comes from soft pressing, with the pressed portion maturing in first-passage tonneau barrels and undergoing regular bâtonnage until March. The result is a rosé with the structure and complexity of a gastronomic wine, not just a summer aperitif.

The color is a delicate rosé with brilliant reflections. On the nose, small red fruits, rose, sage, white pepper, and violet. On the palate, it is agile yet enveloping, with a balance between warmth and freshness that makes it versatile at the table, from appetizers to dessert.
