Barolo Bricco Boschis DOCG BIO comes from one of the most exclusive crus in the Langhe: the Bricco Boschis of Castiglione Falletto, a plot owned exclusively by the Cavallotto family for generations. It is not a commercial selection — it is a precise place, with sun-exposed hills and clay-calcareous marl soils that give Nebbiolo a structure and complexity that cannot be replicated elsewhere.
Cavallotto is among the pioneers of organic farming in Piedmont: as early as the 1970s, when industrial chemistry dominated the Langhe, the family eliminated herbicides and returned to natural vineyard management. Today, that choice is certified, but above all, it is visible in the glass.
In the cellar, no shortcuts: spontaneous fermentations with indigenous yeasts, long macerations with a semi-submerged cap (18-30 days), aging in large Slavonian oak barrels for over three years. No barriques, no toasting that covers the Nebbiolo. The result is a Barolo that tastes of Langhe, not of wood.
The color is ruby red with garnet reflections. The bouquet is ample: undergrowth, wild rose, leather, dark spices, camphor. On the palate, marasca cherry, black raspberry, truffle, mint, star anise, and a finish of blood orange. Solid and well-integrated tannins, lively acidity that guarantees longevity.
