Bresolin's Asolo Prosecco Superiore DOCG Extra Brut BIO Benny is the driest and most taut version of their sparkling wine selection: less than 6 g/l residual sugar, maximum freshness, decisive character. It is made from organic Glera grapes grown in the Asolo hills — a designation reserved for hillside vineyards, with lower yields and superior aromatic complexity compared to the Prosecco DOC from the plains. Soft pressing, fermentation at controlled temperature (17-19°C), aging on fine lees in steel for three months, secondary fermentation in an autoclave.

In the glass, it presents a pale straw yellow. The nose is elegant and complex: peach blossoms, wild rose, and passion fruit combine with fruity notes of apple, grapefruit, and pineapple, with a persistent and citrusy aftertaste. On the palate, it is savory, structured, with an acidic vein that cleanses the palate and invites another sip. Drier and more characterful than Sior Lino, designed for palates seeking tension in their glass.
