The Valpolicella Ripasso Classico Superiore DOC BIO 2021 Il Gabai by Bresolin is made using the traditional ripasso technique: the Valpolicella Classico is re-fermented on the Amarone pomace, still rich in sugars and aromas, extracting color, body, and complexity. It then ages for about 18 months in 500-liter French oak tonneaux from the Allier forests—a long, artisanal process that provides structure without losing elegance. Traditional blend: Corvina 35%, Corvinone 35%, Rondinella 25%, Molinara 5%. A red wine of great character from organic Veneto.

In the glass, it presents an intense, full garnet-red color. The nose is enveloping, with spicy notes of black pepper and tobacco that hint at the depth of the sip. On the palate, it is soft and velvety, with a rich body supported by fine, well-integrated tannins. The finish is long, warm, and persistent, with complexity that develops in the glass.
