The Rosato di Negroamaro Salento IGT BIO comes from the same organic vineyard of Masseria Masciullo, a historic 17th-century winery owned by the Zullo family in Brindisi, in the heart of Puglia. But here, Negroamaro is treated completely differently: manual harvest in the last week of September, cooling of the grapes to 4°C in a cold room, maceration in the press overnight, and aging on the lees until February. A slow and respectful process that transforms a structured red grape into a rosé of great finesse.
The color is a vibrant cherry pink. On the nose, small red fruits, pomegranate, flowers, and a saline note typical of Salento. On the palate, it is fresh, fragrant, and savory, with a surprising persistence for a rosé at this price.

Recommended for
For those looking for a Southern rosé that is not trivial. The Negroamaro vinified as a rosé by Masseria Masciullo is a versatile and characterful bottle — perfect for those who want something different from the usual Provence, with a precise history and territory behind the glass.
When to drink it
It is already enjoyable today, but it has all the characteristics to evolve magnificently over the next 1-2 years if stored correctly. Ideal chilled in summer, but also excellent in autumn with richer first courses.
Taste Characteristics
A deep and savory rosé, in which the freshness of the fruit combines with a typically Salento minerality. The finish is persistent and clean, with a liveliness that makes it perfect at the table from the first course to dessert.
Why we chose this wine
Because Masseria Masciullo's Rosato di Negroamaro is one of the few Southern rosés that truly tells the story of its territory. The vinification is artisanal and unconventional — the cooling of the grapes and the long aging on the lees are choices that make a difference in the glass. It is consistent with our selection because it combines organic quality, precise technique, and a price that needs no justification.
FAQ
What dishes pair well with Rosato di Negroamaro Salento IGT BIO?
Italian appetizers, fish soups, orecchiette with turnip tops, grilled white meats, and fresh cheeses. Also excellent as a summer aperitif.
Why is it different from other rosés?
The vinification is unusual: the grapes are cooled to 4°C before pressing, and the wine remains on the lees until February. This process gives structure and complexity that industrial rosés do not have.
Is it a certified organic wine?
Yes. Masseria Masciullo cultivates organically on 45 hectares of vineyards in Salento, without synthetic pesticides.
Should it be served very cold?
10–12°C is the ideal temperature. Too cold covers the aromas, too warm flattens the freshness. Take it out of the fridge 10 minutes before serving.
