Review your cart →The Pinot Grigio DOC BIO Friuli comes from Simon di Brazzan, an organic farm in Cormons, in the heart of the Friulian Collio. Here, Pinot Grigio is not the neutral, commercial white found everywhere—it is a wine with structure, minerality, and a complexity born from hybrid vinification and the border territory between Italy and Slovenia.
The vinification is precise and elaborate: manual selection, gentle destemming, soft pressing, and temperature-controlled steel fermentation. Two-thirds remain in steel on the lees until the end of February. One-third, however, undergoes 18 days of fermentative maceration, then is separated using a traditional press and aged in wooden barrels on the lees until the end of February. The final blend consists of one-third wood and two-thirds steel. The result is a Pinot Grigio that combines freshness and structure—far from the industrial version of the grape.
On the nose: pear, Golden Delicious apple, white flowers, and a mineral note from the Collio. On the palate: fresh and savory, with surprising structure and a persistent finish with hints of ripe fruit.

Who is it recommended for?
For those who have always thought Pinot Grigio was a banal wine and want to discover what this grape can do when grown organically in the Friulian Collio and vinified with artisanal rigor. It is the right bottle for those seeking a versatile white with personality—suitable for both an aperitif and more elaborate fish dishes.
When to drink it
It is already enjoyable today and is also designed for immediate pleasure. However, it has the characteristics to evolve over the next 2–3 years thanks to the wood component and time spent on the lees. Ideal within 3 years of the vintage.
Taste characteristics
A fresh and savory Pinot Grigio, in which the minerality of the Collio is clearly expressed. The macerated component and time spent in wood add structure and complexity without weighing down the wine. Pear, Golden Delicious apple, and white flowers dominate the aromatic profile, with a persistent finish that invites another sip.
Why we chose this wine
Because Simon di Brazzan's Pinot Grigio demonstrates that this grape, often trivialized by industrial production, can produce exceptional wines when treated with respect. Hybrid vinification—part in steel, part with maceration and barrel aging—is a bold choice that adds complexity without sacrificing freshness. We offer it because it is consistent with our selection: organic, clearly defined territory, precise technique.
FAQ
What dishes does Pinot Grigio DOC BIO Friuli pair with?
Steamed or grilled fish, fish risotto, pasta with vegetables, fresh cheeses, and light appetizers. Its structure also makes it suitable for more elaborate dishes such as baked sea bass or shellfish.
Why is this Pinot Grigio different from those found in the supermarket?
Industrial production of Pinot Grigio focuses on immediate freshness and aromatic neutrality. Simon di Brazzan, on the other hand, uses indigenous yeasts, partial maceration, and barrel aging to add complexity and structure. The result is a wine with a recognizable personality and sense of place.
What does it mean that part of the wine macerates for 18 days?
Fermentative maceration of one-third of the must for 18 days extracts color, structure, and aromatic complexity from the skins. The traditional press then gently separates the wine. Aging in wooden barrels adds roundness. The final blend balances freshness and depth.
Is it a certified organic wine?
Yes. Simon di Brazzan is a certified organic farm in the Friulian Collio. No synthetic pesticides in the vineyard, indigenous yeasts in the winery.
