Malvasia IGT BIO Venezia Giulia is produced by Simon di Brazzan, an organic winery in Cormons, in the heart of Friuli Collio. Malvasia Istriana is one of the oldest and most distinctive grape varieties in Friuli-Venezia Giulia — cultivated in this border region for centuries, with an unmistakable aromatic profile that sets it apart from all other Italian Malvasia varieties. Simon di Brazzan interprets it with a hybrid vinification that enhances its complexity without sacrificing freshness.

The vinification is careful and intricate: manual selection, gentle destemming, cooling of the crushed grapes, two-day maceration in the press, soft pressing with a vacuum press, must cleaning by flotation. Most of it ferments in steel at 18°C. A portion ferments in vats with skins for the entire fermentation, then ages in barrels. Everything remains on the lees until the end of February. The result is a Malvasia of great complexity and depth.

On the nose, white flowers, peach, apricot, and a typical bitter note of Malvasia Istriana. On the palate, it is enveloping and savory, with a surprising structure and a long, persistent finish with hints of bitter almond.
