The Pinot Grigio DOC BIO Friuli comes from Simon di Brazzan, an organic winery in Cormons, in the heart of the Friulian Collio. Here, Pinot Grigio is not the neutral, commercial white wine found everywhere—it is a wine with structure, minerality, and a complexity derived from hybrid vinification and the borderland between Italy and Slovenia.

The vinification is precise and intricate: manual selection, gentle destemming, soft pressing, and fermentation in steel tanks at controlled temperature. Two-thirds remain in steel on the lees until the end of February. One-third undergoes fermentative maceration for 18 days, then is separated with a traditional press and aged in wooden barrels on the lees until the end of February. The final blend is one-third wood and two-thirds steel. The result is a Pinot Grigio that combines freshness and structure—far from the industrial version of the varietal.

On the nose, pear, golden apple, white flowers, and a mineral note from the Collio. On the palate, fresh and savory, with a surprising structure and a persistent finish with hints of ripe fruit.
