The Malvasia IGT BIO Venezia Giulia comes from Simon di Brazzan, an organic farm in Cormons, in the heart of the Friulian Collio. Malvasia Istriana is one of the oldest and most distinctive grape varieties of Friuli-Venezia Giulia — cultivated in this border area for centuries, with an unmistakable aromatic profile that distinguishes it from all other Italian Malvasias. Simon di Brazzan interprets it with a hybrid winemaking process that enhances its complexity without sacrificing freshness.

The winemaking is careful and articulated: manual selection, gentle destemming, cooling of the crushed grapes, two-day maceration in the press, soft pressing with a vacuum press, must cleaning by flotation. Most of it ferments in steel at 18°C. A portion, however, ferments in a vat with skins for the entire fermentation, then ages in barrels. Everything remains on the lees until the end of February. The result is a Malvasia of great complexity and depth.

On the nose, white flowers, peach, apricot, and a bitter note typical of Malvasia Istriana. On the palate, enveloping and savory, with a surprising structure and a long, persistent finish with hints of bitter almond.

It is already enjoyable today, but it has all the characteristics to evolve magnificently in the next 3-5 years if stored correctly. The macerated component and the time on the lees give it sufficient structure for aging.
