The Sauvignon IGT BIO Venezia Giulia It's a white wine that embodies freshness and elegance, an authentic expression of the Friulian terroir. Made from carefully selected, hand-picked grapes from the vineyards of Cormons, Brazzano, and Dolegna, it is produced using biodynamic methods that enhance the purity of the fruit and its connection to nature. The meticulously crafted winemaking process, complemented by a portion of oak barrels, brings complexity and depth to every sip.
The color is a light, bright straw yellow, while the aroma releases delicate green notes of pepper and tomato leaf, intertwined with floral hints of elderberry. On the palate the Sauvignon IGT BIO Venezia Giulia It's warm and full-bodied, with a lingering aromatic character that makes it instantly recognizable. Versatile and refined in pairing, it pairs beautifully with fish appetizers and first courses, sea bass and sea bream, asparagus risotto, and vegetable dishes. A captivating white wine that combines intensity and finesse, showcasing the Friuli-Venezia Giulia region's vocation.

Winemaking: Manual selection of grapes, gentle destemming; cooling of the crushed grapes using a heat exchanger; overnight pressing; soft pressing using a vacuum press; must maturation for 5 days at 8°C; must purification by flotation; fermentation with indigenous yeasts at a controlled temperature of 18°C. Part of the must ferments in wooden barrels. Aged on the lees until the end of February.
