The Cerasuolo d'Abruzzo DOC BIO comes from Palazzo Centofanti, an organic winery in Giuliano Teatino, in the hills of the province of Chieti. Cerasuolo is one of Italy's most unique rosé appellations — not a simple rosé, but a wine with its own dedicated DOC, made from the same Montepulciano d'Abruzzo as the red, but vinified with a technique that enhances its freshness and delicate aromas. The name "Cerasuolo" comes from its color: a bright cherry red, more intense than Provençal rosés, with a personality that reflects the strength of the grape variety.

The vinification is precise and respectful: short cold maceration at 10°C, then soft pressing and immediate removal of the skins, controlled temperature fermentation in stainless steel, and aging for about 2 months on fine lees. This process extracts color and fruity aromas without aggressive tannins, maintaining the typical freshness and sapidity of Cerasuolo.

It has a vibrant and bright cherry-pink color. The nose offers cherry, strawberry, raspberry, elegant floral notes, and subtle vegetal nuances. On the palate, it is fresh, balanced, with well-dosed sapidity and excellent persistence, featuring a fruity-floral finish and a delicate almond hint.

Recommended for

For those who want to discover Cerasuolo d'Abruzzo — one of Italy's most interesting rosé appellations, often unknown outside the region. It's the right choice for those who find Provençal rosés too light and anonymous, and are looking for a rosé with structure, intense color, and a recognizable personality. Versatile: works from aperitifs to full dinners.

When to drink

Immediately, well-chilled, within 2 years of the vintage to best enjoy its freshness. It does not require aging — its strength is its aromatic vibrancy. Ideal at 10–12°C.

Taste Characteristics

A fresh and balanced Cerasuolo, where red fruits — cherry, strawberry, raspberry — integrate with elegant floral notes and a sapidity that cleanses the palate. Cold maceration and aging on the lees add complexity and roundness without being heavy. The finish is long, with a delicate fruity-floral return and a pleasant almond note.

Why we chose this wine

Because Palazzo Centofanti's Cerasuolo tells the story of a high-quality Italian appellation that deserves more visibility. It is organic, produced from the same Montepulciano as the red but with a technique that enhances its freshness and aromas. We offer it because it completes our Abruzzo selection with the region's benchmark rosé — much more interesting than a generic rosé.

FAQ

What dishes pair well with Cerasuolo d'Abruzzo BIO?
Appetizers, light pasta dishes, grilled white meats, fish soups, crustaceans, fresh cheeses, pizza. Its structure also makes it suitable for richer dishes compared to light rosés.

What is Cerasuolo d'Abruzzo? Is it different from a normal rosé?
Yes. Cerasuolo d'Abruzzo is a dedicated DOC — not a simple rosé but a type with precise production rules. It is made from Montepulciano d'Abruzzo with a vinification that preserves the freshness of the grape. The color is more intense than Provençal rosés and the structure is greater, thanks to the natural power of Montepulciano.

Why is maceration done at 10°C?
Cold maceration at low temperature extracts color and fruity aromas from the skins without yielding aggressive tannins. The result is a rosé with the typical Cerasuolo color — bright cherry pink — but with a freshness and lightness that make it pleasant and versatile.

Is it a certified organic wine?
Yes. Palazzo Centofanti is a certified organic winery in Giuliano Teatino, in the province of Chieti. No synthetic pesticides are used in the vineyard.
