The Barolo Riserva Bricco Boschis Vigna San Giuseppe DOCG BIO is the highest expression of Cavallotto: a wine born from a single historic vineyard, Vigna San Giuseppe, within the Bricco Boschis monopoly cru in Castiglione Falletto. It is not a Riserva in the commercial sense of the term — it is the selection of a specific plot, with a specific history, that Cavallotto has carefully preserved for generations in the heart of organic Piedmont.
The family is among the pioneers of organic farming in Piedmont: already in the 1970s, they eliminated chemical herbicides when no one else was doing so. In the cellar, the style is strictly traditional: indigenous yeasts, very long maceration with a submerged cap (22-38 days), aging in large Slavonian oak barrels for 4-5 years, then one year in the bottle. No barriques, no acceleration. Only time.
The color is ruby red with garnet hues. The bouquet is intense and layered: violet, stewed plum, leather, baking spices, then lavender, incense, licorice, dried herbs. On the palate, it is broad and deep: morello cherry, cinnamon, nutmeg, mint, Earl Grey tea. Incisive but perfectly integrated tannins, vibrant acidity, and a very long finish that continues to evolve in the glass as the wine opens up.
