The Cerasuolo d’Abruzzo DOC BIO comes from Palazzo Centofanti, an organic winery in Giuliano Teatino, in the hills of Chieti province. Cerasuolo is one of Italy's most unique rosé denominations — not a simple rosé, but a wine with its own dedicated DOC, made from the same Montepulciano d'Abruzzo as the red wine but vinified with a technique that enhances its freshness and delicate aromas. The name "Cerasuolo" comes from its color: brilliant cherry red, more intense than Provençal rosés, with a personality that reflects the strength of the grape variety.
The vinification is precise and respectful: short cold maceration at 10°C, followed by soft pressing and immediate removal of the skins, fermentation at controlled temperature in stainless steel, and aging for about 2 months on the fine lees. This process extracts color and fruity aromas without aggressive tannins, maintaining the typical freshness and savoriness of Cerasuolo.
It has a vibrant and brilliant cherry pink color. On the nose, cherry, strawberry, raspberry, elegant floral notes, and subtle vegetal undertones. On the palate, it is fresh, balanced, with well-dosed savoriness and excellent persistence, featuring a fruity-floral finish and a delicate almond hint.
