The Sauvignon IGT BIO Venezia Giulia comes from Simon di Brazzan, an organic winery in Cormons, in the heart of the Friulian Collio. In this border area between Italy and Slovenia, Sauvignon finds ideal conditions — clay and limestone soils, significant temperature excursions, a winemaking tradition dating back centuries. Simon di Brazzan interprets it with a hybrid vinification that balances aromatic freshness and structural complexity.

The vinification is careful and detailed: manual selection, gentle destemming, cooling of the destemmed grapes, resting in the press overnight, soft pressing with a vacuum press, cold maceration of the must for 5 days at 8°C, clarification by flotation. Fermentation takes place with indigenous yeasts at 18°C — part in steel, part in wooden barrels. Everything remains on the lees until the end of February. The result is a Sauvignon that goes beyond the immediate aromatic profile and offers structure and depth.

On the nose, bell pepper, tomato leaf, citrus, and a mineral note from the Collio. On the palate, fresh, savory, with a structure that surprises compared to the typical lightness of the grape variety. Long and persistent finish.
