The Sauvignon IGT BIO Venezia Giulia comes from Simon di Brazzan, an organic farm in Cormons, in the heart of the Collio friulano. In this border area between Italy and Slovenia, Sauvignon finds ideal conditions — clay and limestone soils, significant temperature fluctuations, and a winemaking tradition dating back centuries. Simon di Brazzan interprets it with a hybrid winemaking approach that balances aromatic freshness and structural complexity.

The winemaking is meticulous and detailed: manual selection, gentle destemming, cooling of the must, overnight skin contact, gentle vacuum pressing, 5 days of must settling at 8°C, and flotation for clarification. Fermentation takes place with indigenous yeasts at 18°C — part in steel, part in wooden barrels. It remains on the lees until the end of February. The result is a Sauvignon that goes beyond its immediate aromatic profile and offers structure and depth.

On the nose, bell pepper, tomato leaf, citrus fruits, and a mineral note from the Collio. On the palate, fresh and savory, with a structure that is surprising compared to the typical lightness of the grape. Long and persistent finish.

Who is it recommended for?

For those who love aromatic Sauvignon but want something more complex than the usual fresh white wine for an aperitif. The wooden component and the time spent on the lees provide structure and depth, making it a truly gastronomic wine. It is the right bottle for those who want to discover the Sauvignon of the Collio friulano — different from that of Alto Adige, different from that of New Zealand.

When to drink it

It is already enjoyable today, but it has all the characteristics to evolve over the next 2–4 years. The wooden component and structure support its aging. Ideal within 4 years of the vintage to enjoy both its aromatic freshness and complexity.

Taste characteristics

A structured and complex Sauvignon, in which the varietal aromas — bell pepper, tomato leaf, citrus fruits — blend with the minerality of the Collio and the roundness of the wooden component. Freshness is present but not dominant — it is a table wine, not an aperitif wine.

Why we chose this wine

Because Simon di Brazzan interprets Sauvignon with a serious craftsmanship that is clearly evident in the glass. The must settling, fermentation with indigenous yeasts, and the wooden component are precise choices that add complexity without sacrificing the varietal identity. We offer it because it is consistent with our selection: organic, clearly defined terroir, and respectful techniques.

FAQ

What dishes does the Sauvignon IGT BIO Venezia Giulia pair with?
Fish appetizers, pasta with vegetables, light risottos, white meats, fresh cheeses. Its structure also makes it suitable for more elaborate dishes than classic Sauvignon.

Why is the must settled for 5 days at 8°C?
Settling at a low temperature allows the must to decant naturally, removing solid particles without aggressive filtration. It preserves aromatic clarity and prepares the must for more controlled fermentation with indigenous yeasts.

What does it mean that part of it ferments in wooden barrels?
Fermenting part of the must in wooden barrels adds complexity, structure, and a slight roundness to the final wine. Blending it with the part fermented in steel balances freshness and depth.

Is it a certified organic wine?
Yes. Simon di Brazzan is a certified organic farm in the Collio friulano. No synthetic pesticides in the vineyard, indigenous yeasts in the winery.
