The Pinot Grigio IGT Terre di Chieti BIO comes from Palazzo Centofanti, an organic winery in Giuliano Teatino, nestled in the hills of the Chieti province in Abruzzo. Pinot Grigio is an international grape variety, but here it tells the story of a specific territory – the Teatine hills between the Apennines and the Adriatic, with a climate that imbues the wine with a freshness and lively acidity that clearly distinguish it from the flat and neutral Pinot Grigios found in mass distribution. The white vinification with a maximum must yield of 50% – a precise production choice – prevents the wine from acquiring the typical rust color from the skins, preserving aromatic purity and varietal freshness.

The vinification is careful and respectful: soft pressing, fermentation in steel tanks at low temperatures, aging on fine lees for about 4 months before bottling. The fine lees impart structure and creaminess without heaviness, giving the wine a complexity that goes beyond standard Pinot Grigio.
