Review your cart →The Pinot Grigio IGT Terre di Chieti BIO comes from Palazzo Centofanti, Giuliano Teatino's organic winery, in the hills of the province of Chieti in Abruzzo. Pinot Grigio is an international grape variety, but here it tells the story of a specific territory — the Teatino hills between the Apennines and the Adriatic, with a climate that gives the wine a freshness and lively acidity that clearly distinguish it from the flat and neutral Pinot Grigios found in supermarkets. White vinification with a maximum must yield of 50% — a precise production choice — prevents the wine from acquiring the typical rust color from the skins, preserving aromatic purity and varietal freshness.
The vinification is careful and respectful: gentle pressing, fermentation in steel tanks at low temperatures, and aging on the fine lees for about 4 months before bottling. The fine lees add structure and creaminess without weighing the wine down, giving it a complexity that goes beyond standard Pinot Grigio.
On the nose, it has a pale straw color. Intense aromas of tropical fruit — mango, papaya — with delicate floral nuances. Fresh and harmonious on the palate, with lively acidity, a perfect balance between freshness and savouriness, and a long, refined finish with fruity and floral notes.

Who is it recommended for?
For those who love Pinot Grigio but want something more interesting than industrial versions — an organic Pinot Grigio, produced in Abruzzo with a vinification that prioritizes aromatic freshness and fruit purity. It is also the right choice for those looking for a versatile white wine for an aperitif or to pair with fish without spending much.
When to drink it?
Immediately, well chilled, within 2 years of the vintage to enjoy its freshness to the fullest. It does not need aging — its strength lies in its aromatic liveliness and freshness. Ideal at 10–12°C.
Taste characteristics
A fresh and harmonious Pinot Grigio, with an aromatic profile unusual for the grape variety — tropical fruit (mango, papaya) instead of the usual citrus, with delicate floral nuances. The lively acidity balances the structure and savouriness. Aging on the fine lees adds creaminess and complexity. The finish is long and refined, with a strong fruity and floral return.
Why we chose this wine
Because Palazzo Centofanti's Pinot Grigio demonstrates that an international grape variety can tell the story of a specific territory — the Abruzzese hills of Giuliano Teatino — with careful organic vinification. The choice of a maximum must yield of 50% is a precise production decision that guarantees aromatic purity and freshness. We offer it as a quality alternative to the anonymous Pinot Grigios found in supermarkets.
FAQ
What dishes is the Pinot Grigio IGT BIO paired with?
Refined aperitifs, seafood salads, shellfish, fish first courses, delicate white meats, boiled or grilled fish. Its freshness also makes it ideal with more elaborate dishes such as soufflés or preparations with cream.
Why is a maximum must yield of 50% important?
Limiting the yield to 50% means using only the finest part of the must, that extracted with the gentlest pressing. This guarantees greater aromatic purity, freshness, and quality in the final wine. A higher yield would produce a coarser and less defined wine.
Why does this Pinot Grigio have tropical aromas instead of the usual citrus?
The climate of the Teatino hills — warm during the day and cool at night thanks to the influence of the Apennines — favors a ripening that develops tropical fruit notes (mango, papaya) in the Pinot Grigio instead of the more northern aromas typical of Alto Adige or Friuli. It is the territory speaking in the glass.
Is it a certified organic wine?
Yes. Palazzo Centofanti is a certified organic winery in Giuliano Teatino, in the province of Chieti. No synthetic pesticides in the vineyard.
