Recioto della Valpolicella Classico DOCG I Monti is a sweet red wine of great tradition and intensity, an authentic expression of the Veronese hills. It has a deep red color with purple hues and an enveloping aroma that combines violet flowers, fruit in syrup, plum and cherry, enriched by elegant spicy hints of vanilla and cocoa. The long drying of the selected bunches, followed by a slow maceration at low temperature, gives the wine concentration and complexity.

On the palate, this Recioto della Valpolicella Classico conquers with its balanced sweetness, fragrance and elegance. The natural residual sugar (about 10%) is perfectly balanced by a harmonious structure, making it ideal in combination with chocolate desserts, dry biscuits and mature cheeses. After aging in steel and bottle, it reveals itself as a great dessert wine capable of surprising with every sip.

Vinification: After a careful selection of the best bunches in the harvest and a long drying process of about 5 months, during which the grape loses weight and undergoes a concentration of its components, in February the grapes are pressed and destemmed and a maceration of over 40 days at low temperatures begins. When 14.5° alcohol is reached, fermentation is interrupted by separating the must from the marc.
Repeated racking is carried out to maintain a residual sugar content of approximately 10%. Refining in steel for 6 months and then for 3 months in the bottle
