Organic Amarone della Valpolicella Classico DOCG - Ca' Celeste

Valpolicella Ripasso Classico Superiore DOC Il Gabai is a wine that stands out for its complexity and depth, the result of the traditional ripasso technique and the careful selection of the best bunches. The color is a very intense red, while on the nose it opens with a rich and complex bouquet, with spicy notes that recall licorice, pepper, cocoa and flint. An aromatic profile that reveals the influence of the typical production method of Amarone della Valpolicella Classico Superiore .

On the palate, it is soft and velvety, with a full body and fine tannins that make the tasting experience elegant and enveloping. With an alcohol content of 16%, this wine lends itself to robust dishes such as beef slices and game, but is also perfect as a meditation wine. After drying for about 3 months and a slow fermentation, it ages for 24 months in oak barrels and a further 12 months in the bottle, recalling the distinctive characteristics of Amarone Ca' Celeste .

Format: 0.75 l

Vinification: For the production of Amarone, the best and most sparse bunches are selected, optimally exposed to the sun and left to dry in boxes for a period of about 3 months. During this period, the grapes lose about 40% of their weight.
The grapes are then pressed in January in steel wine vats. Fermentation is completed at a controlled temperature of 18° in about 25 days.
It is then refined partly in oak barrels with a capacity of 500 litres and partly in 20 hectolitre barrels for 24 months and subsequently in 0.75 litre bottles for another 12 months.
